A contemporary cava, where the fruit and freshness of the most classic cavas is maintained, but the body of the Xarel·lo gains prominence, and the aromatic complexity increases.
Combination of the three traditional Penedès varieties with a different approach: Xarel·lo, Macabeu and Parellada.
PAIRING: Seafood, rice, pasta and grilled fish.
Fermentation at 16 ° C in stainless steel vats for 2 weeks.
Without barrel aging.
Second fermentation in the bottle according to the traditional method, with an approximate aging of 24 months.
Golden yellow color, a reflection of its greater aging.
Intense nose, with notes of pastries and lactic touches on a background of very ripe white fruits.
Smooth entry into the mouth, with a balanced mid palate, which denotes structure and a certain bulk. Mastery of secondary aromas from aging, with light toasted notes and hints of yeast. Long and complex aftertaste.
Serve at 6 - 8ºC.
