The highest summits of the Penedès, where the sources that nourish the Foix spring, are the mothers of Ginesta.
Pairing: Seafood and crustaceans, grilled fish and poultry stews.
After a long film maceration of 4 hours, the grapes are gently pressed and fermented in a stainless steel vat for 20 days at an average temperature of 16 ° C. After the fermentation, the contact of the wine with the fine lees preceding the fermentation is continued for approximately 3 months with daily battonage.
Half of the wine is aged in French oak barrels, new and second year, for 3 months.

Along with tradition and quality, environmentally friendly cultivation of vineyards is one of the main hallmarks of Parés Baltà. All the wines from that winery are certified organic and biodynamic vineyards (Demeter).
