VINEYARDS
The grapes used for Rebel.lia come exclusively from different plots of our Finca Alfaro that are complemented for each vintage in order to achieve an organoleptic balance. Cultural practices promote biodiversity and sustainability with comprehensive organic farming.
ELABORATION
The grape varieties are vinified separately depending on the optimum degree of maturation for the conceived style of wine. They arrive at the winery and a very light destemming and crushing is carried out, for subsequent fermentation in stainless steel tanks with temperature control, not higher than 26º, and which usually lasts between 10 and 12 days with short and periodic pump-overs. Once the fermentation is finished, it remains macerating with the skins for a few more days to later uncover by gravity and proceed to a gentle pressing with a pneumatic press, with a pneumatic press, for its permanence in the barrel for approximately three months a part of the wine.
CATA'S NOTES
Color: Dark red cherry color with purple tones in the trim.
Nose: Good intensity on the nose, highlighting red fruits, wild herbs and subtle toasted touches.
Palate: A fresh, fruit-driven entry expands in the mouth with notes of plum, cherry and blackberry.
The fine and well integrated tannins of the wine have a balanced and long finish.
