The grapes used for Rebel.lia come exclusively from different plots of our Finca Alfaro that are complemented for each vintage in order to achieve an organoleptic balance. Cultural practices encourage
biodiversity and sustainability with a comprehensive organic farming.
The grape varieties are vinified separately, depending on the optimum degree of maturation, to be destemmed and pressed directly, obtaining the flower must, which once clarified by applying cold, proceeds to fermentation in stainless steel tanks at temperatures between 14º -16º for approximately 25 days, leaving the wine in contact with its lees until its subsequent clarification, filtering and bottling.
Color: Clear and bright with straw yellow color.
Nose: Good intensity in the aroma, with citrus notes of lime, mango and other tropical fruits.
Palate: Dry, rich and supple, with flavors of lime zest, velvety fruit and subtle spices. A versatile and balanced wine with clean acidity and good length.
50% Chardonnay / 50% Sauvignon Blanc
Alc. vol: 12.5 - 13.5%
Total acidity: 5.5 - 6.5 gr / l
Total sulfur: 60 - 90 gr / l
SERVICE AND PAIRING
Temperature: between 8º and 10º.
Pairing: appetizers, salads, smoked meats, fish and seafood, pasta, fideuá and seafood rice dishes, Asian food and soft cheeses.
