La Novia Ideal Rosado is a semi-sweet rosé wine made with the bobal variety by the la Compañía vitivinícola del Mediterráneo in D.O. Valencia. DSG Vineyards & Bruno Murciano David Sampedro Gil (DSG Vineyards) and Bruno Murciano (best Sommelier in Spain in 2008) come together in a project that gives all the prominence to terroir and bets on autochthonous Valencian varieties such as bobal. Through organic and biodynamic practices they achieve a collection of the most representative terroir wines. On the other hand, they have also embarked on la Compañía vitivinícola del Mediterráneo, a new project together with the Valsangiacomo winery with which they make La Novia Ideal and El Novio Perfecto, two semi-sweet wines of the most fun. In the case of La Novia Ideal Rosado, it is a wine made with the native variety bobal. It is obtained from vineyards that are located in the town of San Juan del Valle, in the Central Valley of Utiel-Requena (Valencia) and that are cultivated through organic practices and respectful of the natural balance of the terroir. When the grape reaches its optimum moment of maturation, it is harvested manually. The vinification of La Novia Ideal Rosado begins with a partial fermentation of the bled must until it reaches 6% alcohol. At this point, cold fermentation is stopped, lowering the temperature to -2ºC. Next, a second fermentation is reactivated in cylindrical stainless steel tanks until obtaining 10% alcohol. Then it stops again to leave the sugars of the grapes that have not yet fermented and obtain a wine with fine bubbles and pleasant sweetness. La Novia Ideal Rosado is a very sparkling semi-sweet young wine. Fine bubbles, young and cheerful with a touch of sweetness in the mouth.
