The stuffed loin comes from the loins of our Duroc Porcellet pigs. The outer fat is removed from the loins, salted and marinated with a mixture composed mainly of paprika, to finally stuff them in natural casing and go through the drying and curing process. Our loins have an intense and natural flavor and a strong but juicy texture. They are faint red in color and, thanks to the type of high-quality feed our pigs receive and the Duroc breed, they have a high amount of infiltrated fat, which gives them a marbling appearance. The loin sausage is considered one of the healthiest sausages that exist, since it contains a high protein content in relation to fat and has little handling. The tenderloin is eaten raw, preferably cut into thin slices. Although it is a cured product, we recommend keeping it refrigerated.
