PANELLETS WITH PINE NUTS

INGREDIENTS:

- 300 g potato

- 340 g ground MARCONA almonds

- 260 g icing sugar

-300 g pine nuts

-2 egg yolks

- grated lemon zest

PREPARATION:

STEP 1: 

Boil potatoes, peel and mash them with a fork.

Add icing sugar and mix. Add the almond flour and lemon zest.

Mix until a homogeneous dough is obtained and leave to rest for 2 hours in the fridge.

STEP 2:

Divide the dough and form each portion into small balls.

Dip them first in the beaten egg yolk and then in the pine nuts until they are well covered.

STEP 3:

Bake on baking paper at 180ºC for 10 minutes. 

Leave to cool and enjoy!
